Soup, soup and more soup

Soup is how I get myself back on track. Around Christmas I stocked my freezer and was still able to make some every few weeks, but of course life gets busy and 'no soup for you', lol. So while I was visiting my sister I picked up the Canadian Living: Easy Healthy Summer meals. I LOVE Canadian Living magazines. Always lots of recipes with nutritional info!!

So first soup I made yesterday, the always helpful 0pt veggie soup.

Today I made strawberry soup...heaven on a spoon :). Super easy and I loved it. My variation from the magazine :

4cups strawberries (I used frozen, dethawed)
1cup cran-grape juice
1cup balkan plain yogurt
1cup water
1/2cup sugar
1tbsp lime juice

Blend together in blender.
Set in fridge for 1hr and serve. It actually says to strain it but we all liked it just fine. Serve cold.

3pts per serving, which I think is about 1-1 1/4cups. I used reduced cal cran-grape juice instead of cranberry just because that's what I had so my points could be less. Sorry no pics my camera died so when I get batteries I'll post it.

Next soup from Canadian Living mag: Green Velvet Soup (doesn't it just sound great)
Can be served hot or cold

1tbsp EVOO
2 leeks (white and light green parts only)
1 onion
1tsp salt
1/4 tsp pepper
4cups diced zucchini
1 potato, peeled and diced (I don't peel potatoes)
1/3 cup 10% cream (I used light 5%)

In saucepan, heat oil on med: cook leeks, onion, salt, pepper, stir occasionally for 5min

Add zucchini, potato and 4 cups of water, bring to boil, reduce, cover, simmer 20min

blend it to a puree

stir in cream

1pt per serving, makes 8 servings I'd say 1-1 1/2cups a serving. I just had a bowl, its good but I added salt and pepper to my bowl. I might like it with garlic too. I had it warm.

We took the girls on a bike ride...umm can I say they hated it. 2 girls in those bike trailer together means trouble I think. Hopefully they will get better at it. 5miles there, easy.

But we also got back to p90X tonight :) Chest and back, abs. So off to a good start this week.

0.2lbs is just a feeding I'd always say LOL, that is so true!

Wow you are doing fantastic. That Strawberry soup recipe sounds delicious.

We just bought one of those bike trailer things. Seems like it would be so much fun, but I'm sure the kids could get into trouble.
