Butternut squash and feta cheese:
package of butternut squash (or one chopped up)
2 shallots thinly sliced
EVOO 1tbsp
EVOO 1tbsp
60z feta cheese light
whole wheat spaghetti
1cup chicken broth
Cook spaghetti
Saute squash with EVOO on medium heat till it is browned (6min). Add shallots, cook for 2min. Add chicken broth and simmer for 8min. Than add the feta cheese and noodles to the pan, mix together.
serving 1 1/2 cup 7pts
I'm doing really well this week, I'm sure my 2lb gain is gone from Christmas treating. Journalling is going well, exercise is a given. I'm still very hungry all day though. In the journals it has the hunger chart to put how hungry you feel before and after meals. I'm always in the hungry area, even after I eat. I must have stretched the stomach out over the holidays! I'm really thinking about choosing filling foods to try to work through this. I'm almost done my flex for the week so I think this is just an adjustment for my body.

For some reason butternut squash and cheese just go so well together ! My son was a confirmed "Blue Box" and blue box only mac and cheese kind of kid till the day I made it using butternut squash puree, cottage cheese and a little cheddar. The pairing of squash and cheese just works for some reason
