A comfort of colour. My downfall is comfort food. I love chili, spaghetti, sheperd's pie, these meals are hard for me to control my portion size. But I made this super friendly for moi. And it was a winner for my husband who had two servings (its made with ground turkey and he hates turkey, lol) and even the girlies ate some (pleasing them is next to impossible unless its mac and cheese or cereal).
Colourful Sheperd's pie
ground turkey
onion
garlic
frozen peas
frozen/can corn
2 big sweet potatoes
2 small white potatoes
butter
milk
1/4 cup of cheese
Peel and slice potatoes, bring them to a boil. Brown the meat, grate garlic into the meat, add italian seasoning. Chop onion and add to meat mixture. Continue with the potatoes...add butter, milk and beat till desired texture, than add 1/4 cup of cheese, beat until blended.
Layer meal: meat on the bottom, 1/2 bag of frozen peas, 1 can of corn, potato mixture. Heat in the oven at 350F until slightly toasted on top. Enjoy!
I made this meal the night before so all I needed to do tonight was heat it through. Makes dinner mindless and super easy. Now I need to get started on my dinner for tomorrow night.

Mmm that looks good! I've never though to use sweet potato in Shepard's Pie, thanks for the recipe.
This looks really good. Way to make comfort food healthy.
