Eggs, its whats for dinner.


Trying to find easy meals that are healthy is a challenge. This egg/quiche idea works well in my family.
For this recipe, I sprayed a glass dish with pam, I pressed leftover rice in the bottom as the 'crust'. Mix the eggs with veggies, milk and cheese. Baked it for about 50min or until egg mixture is firm (the only downside is the cooking time). And my family eats this up. Its very similar to an Eat Shrink and Be Merry recipe I did a while ago.
