I was waiting for a while now to get a food processor since Marissa mentioned she made homemade larabars. I was hooked and wanted a food processor from then on (probably would have been easier if I had one to make babyfood but...)
I'm very excited with my finished product.
I made coconut sarahbars, hehe!
1 cup almonds
2 cups of California dates
1 cup unsweetened coconut
2 tbsp of extra virgin coconut oil
1 tsp vanilla extract
I pureed the almonds first, did the dates separately, than combined them, added the rest of the ingredients and then put them in the 'bite size' muffin tins (about half full)
They are 3pts each, high in points because the coconut oil is very high in fat. (130 cal, 10g fat, unsure on the fibre, will have to find another calorie counter)
The next time I make them I will use 1-1 1/2 tbsp on coconut oil and probably no vanilla extract.
