Thanks Rachel Ray!

I love Rachel Ray, however I cannot eat her meals everyday or I would blow up. Her meals are good, natural ingredients but they tend to be rich. BUT I still love her ideas. So I tried one the other day, bacon wrapped sweet potatoes and chicken kabobs.

Slice sweet potatoes about 1/2 inch thick, parboil them for 7min

Wrap bacon around the slightly cooled sweet potato and needle it through a kabob stick. BBQ for about 10-12min or until bacon is cooked. Serve with maple dip :  1 cup sour cream, 1/4 cup of maple syrup. Tastes like candy!!!

With the chicken kabobs.

Sorry no pictures of the finished product as I devoured it! It was soo good.

bacon makes everything better! I love R.R.'s recipes but you're right, they're way to rich to make everyday!

I have this recipe in my "to try" pile. I LOVE RR and watch her everyday. I have made several of her recipes and just make small changes to be a little more healthy or more towards my needs following Weight Watchers. Glad it turned out well!!
